I see you were using the GPU rendered UI with Skia/Metal. Does it make a
difference, if you deactivate Skia? Tools - Options (LibreOffice - Preferences
on macOS) - LibreOffice - View - Use Skia for all rendering

Set to NEEDINFO.
Change back to UNCONFIRMED after you have provided the information.

CPU threads: 4; OS: Mac OS X 13.0; UI render: default; VCL: osx
Locale: en-AU (en_AU.UTF-8); UI: en-US
Calc: threaded
3.  Opened application on the landscape orientated screen from the
./soffice.sh script.
4.  Application scales to the landscape orientated screen.
5.  Opened application on the portrait orientated screen from the
./soffice.sh script.
6.  Application scales to the portrait orientated screen.
7.  Opened application on the landscape orientated screen from the
./soffice.sh script.
8.  Application scales to the landscape orientated screen.
9.  Opened application on the landscape orientated screen from the
./soffice.sh script.
10. Application scales to the landscape orientated screen.
11. Opened Writer. 
12. Moved Writer from the landscape orientated screen to the portrait
orientated screen and made the following observations:
a.  Manually resized the Writer application window and did not observe the
application turning grey.
b.  Moving the Writer application from one screen to another did not have
an impact. 

CONCLUSION: I WAS NOT ABLE TO CONFIRM WHAT PREVIOUSLY OBSERVED.
