I've tried Hwaen's solution and it works. I don't really need all to use PDF tools as it's only a small score and I don't have a duplex printer anyway, so can sort the pages by hand. A workaround would be to use the edition-engraver & page-layout packages to manage synchronized (manual) breaks, create two pdfs, shuffle them somehow and have the pagination done separately (e.g. in LaTeX). A more low-level feature request would be to add a paper variable that allows odd-only or even-only pagination.
