Have you already checked to ensure the problems are not caused by hardware issues? If the crashes really are random it usually points to hardware.

Are you getting kernel dumps? Back in the 2.0.xx days we had issues with SCSI drivers that didn't multi-process properly but the crash dumps were very helpful. And as Jason said, test the hardware well. At least give them a good thrashing with memtest86.

Just curious - are you using XFS? If so, there were some bugs fixed after 2.6.18 which expose problems / corruption that was caused in 2.6.18 and before. This exposure results in kernel panics regularly. If you have this, your only option is to back up, wipe, reinstall.
