If your pdf files are already text, and you just want a text version  
of the pdf, then just command-a to highlight the whole document, then  
open text edit, and paste in the text.

Thhat's all there is to it.
Of course, there's caveats (isn't there always)
First, the pdf file must be text, obviously images won't work.  Well,  
more precisely, they will work, but you won't get text, just the  
image in question.
Secondly, the pdf must not be protected, or the text won't copy.  Of  
course, there's ways around that too, but those are off topic for  
this list, so won't be mentioned here.
So, there you go, If you're wanting to convert pdf files with images  
into text, then you can use something like read iris pro (there's a  
free version, but there's other products too, as already mentioned in  
this thread.

ABBY can work from an opened PDF file.

Having bought ABBY, I've actually ended up using PDFPenPro instead. I
think it behaves much more like a Mac application than ABBY. However,
I don't know how well it plays with VoiceOver.

There is a good free automatic email conversion   service which will do this
which somebody posted a few weeks ago. You might be able to find it on the
archives . I did save the mail with the address but I am not on my Mac at
the moment. I will send it in later if nobody else does it before me.


I used the service to convert my I-Mac User  guide PDF to text so I could
listen to it on the fly with my Pocket Plextalk and this worked well.
Basically you email the PDF  as an attachment and you get a text version
emailed back as an attachment very quickly
