Sorry - I forgot to add: if there's a menu entry for the control that you want,
then you should be able to create a keyboard shortcut for it in the MacOS
keyboard settings. I haven't used this feature, but apparently you need to
enter the text of the menu entry exactly, including capitalization, to define
the shortcut.
Obviously, this only works if the app's developers have created menu entries
for the functionality that you want to use. I'm referring to the MacOS menus
accessed with VO-M.

AppleScript would help, but I haven't investigated it.
You may find that the Item Chooser menu helps in navigating to desired controls
quickly, as you can partially type the name of what you're looking for to move
to it directly.
I hope this helps. I know it isn't the perfect solution.
