I tried it all out and some I can confirm. I'll comment sequentially.

1. I did not know you could use the rotor to select a field on a contact card 
that you want to edit. I tried it this way: I open contacts, open a random 
card, hit edit, and then I turn the rotor. No contact specific information is 
in the rotor. Is there supposed to be any contact related stuff in the rotor 
that you know of, once you are editing a card? I can no longer try it out on 
IOS 6, because I only have one IOS device and I'm on 7 now.
Also, I did try to edit a name and a family name, both with no luck. That 
surprised me. But what happens here, is that even when having the rotor on 
characters, it is impossible to move the text entry cursor across a family name 
or first name field, character by character. Flicking up or down with the rotor 
set to characters, just bonks at me. In IOS 6, it used to move the cursor one 
character at a time with each flick. That no longer happens, making it 
impossible to edit a contact's first or family name.

2. Regarding the cursor to start and cursor to end issue: it only says cursor 
to start of edit field, but as I said above, there is no way to move the 
cursor, so I cannot check at all whether or not the text cursor is at the start 
or at the end of the field. But that it's now broken, that is a fact.

3. On a contact card that did not have an address yet, while flicking across 
the card from top to bottom, I did indeed find an address field that was blank. 
This is what one would expect. I double tapped the address field, and bang, I 
was thrown out of the contacts app, back to my home screen. If that is what you 
meant when you said the phone app crashed, then yes, it happens here as well. 
Only difference on my side is, that I was editing my contact card off of the 
contacts list inside the contacts app, and I was not doing it using the 
contacts tab inside the phone app.

Did you report the issues to Apple accessibility yet?

Hello everyone. I tested this on my IPhone 4s. I cannot edit the first or
last name but can edit the other fields. If I type into the first or last
name field, characters are appended to the end of the field so Apple intends
for this field to be editable. I reported this issue to the Apple
Accessibility team. The representative confirmed that there is no way to
edit contacts while using Voice Over. First, he told me how to submit
product feedback. Then he told me that he would check with the Engineering
team to see if there is a work around. I followed these steps to submit this
feedback and I would encourage everyone on the list to submit feedback as
well.

1.   I went to the Apple Product Feedback
  page.

2.   Since I have an IPhone 4s, I accessed the IPhone link.

3.   I wrote my comments.

4.   I submitted the feedback.

 

When submitting your feedback please specify that you are using IOS 7. I
know that some of you on this list have been testing IOS 7. Did any of you
catch this issue while testing and if so, did you report it. I want to be
sure that apple responds to these issues during Beta testing. Please, if any
of you elect to beta test IOS in the future, contacts should be one of the
first things you check since it's of interest to everyone. Finally, if any
of you were successful getting your feedback heard and responded to during
BETA, tell us exactly how you did it so that we can help in the future.

I think I have figured out a workaround until Apple fixes it. It's not true 
that you can't edit the thing although it does appear that way. When I went 
into the name field voice over didn't tell me that I was moving between 
insertion point at start or insertion point at the end. I tried this twice, and 
here is what I think I have figured out.

Voice over is just not telling you what is what. It appears that if you double 
tap on the name field, that you end up automatically at insertion point at end. 
When I did it, voice over said insertion point at start every time, but that 
was not true all the time, I think. So for now, you can just assume that you're 
at the end and delete character by character. I could not get into the edit 
field where you could take out the whole thing if you wanted to without doing a 
character by character deletion. However, I was successful at editing the field 
although not normY like we're used to.

This must be a iPhone4 and 4s issue.  Because I had my iPhone5 using IOS7
for 2 days, and now my 5s for almost a week, and I am able to edit contacts
on my 5s now, and on my 5 before I got my new device.

Hello. Did you try to edit first and last names with your IPhone 5? The other 
fields are editable in the normal way but the first and last name fields are 
not.

I think I have figured out a workaround until Apple fixes it. It's not true
that you can't edit the thing although it does appear that way. When I went
into the name field voice over didn't tell me that I was moving between
insertion point at start or insertion point at the end. I tried this twice,
and here is what I think I have figured out.

Voice over is just not telling you what is what. It appears that if you
double tap on the name field, that you end up automatically at insertion
point at end. When I did it, voice over said insertion point at start every
time, but that was not true all the time, I think. So for now, you can just
assume that you're at the end and delete character by character. I could not
get into the edit field where you could take out the whole thing if you
wanted to without doing a character by character deletion. However, I was
successful at editing the field although not normY like we're used to.

first things you check since it's of interest to everyone. Finally, if any
of you were successful getting your feedback heard and responded to during
BETA, tell us exactly how you did it so that we can help in the future.

Hello Clifton. I just tried to edit a contact on my wife's IPhone 5 and the 
sane behavior occurred. When I tried to edit first names I could not move 
around in the field. The only way to edit the field is to delete the text one 
chacter at a time. The edit item in the rotor doesn't work either.
