Move through until you hear “Disclosure.”  Activate that and the dialog will 
expand to the full panel where you can navigate the folder structure.

Saving Files in Text Edit

There is probably a simple answer to this that I knew at one time, but my 
brain is fried, and I need to work with someone on it tomorrow. So... When 
you save a file in text edit, how do you find the specific folder where you 
want to save it instead of the folders it suggests in the popup area? I 
know there's a sidebar, but I'm not seeing how changing the selection in 
one affects the other. I usually just save the file in the folder it 
defaults to and then move the file later, but I think my client would 
rather avoid that extra step if she can.
