Hello robert, 
yes, in Big Sur the boot partition is a read-only signed image that is merged 
with the data area. I believe the startup marker is indicating that you can 
boot from it, not that you have booted from it. if you erase this partition ( 
well, it is not really a partition) than you will lose Big Sur and probably 
your recovery partition.

Strange volume on desktop after installing Big Sur

Dear list,
I hope some of you can help with this issue.
I installed Big Sur on a second APFS Volume on Catalina.
The install went well, but while in Catalina, there is a volume on the desktop 
called Update.
If I boot into Big Sur there is Macintosh HD, and Big Sur volumes as it should 
be. I can even open the Mac HD to browse my Catalina files.
But if booted into Catalina, there is no Big Sur volume on the desktop, Just 
Mac HD and Update volumes.
I have searched but did not find a solution for this problem.
In disk Utility the volume is called
com.apple.os.update-35C699ADD439C653A3B09EBD8A30FBD366881244EB7C82207A2E135362FCCB7F
