I am running

Nokia 770
OS 2006 3.2006.49-2
maemo-bt-plugin-0.6.1-1

I have been reviewing the connection processes discussed with the manual
with this Freedom Universal Keyboard (with other supported drivers) and it
does not mention any key sequence to start the connection process.  It only
says when you turn the keyboard on there is a small flashing green light on
the keyboard flashing every other second, which mine does.

With my Stowaway keyboard, all I do is this:

* Open the keyboard
* Press Ctrl + Green FN + Blue FN to make the device visible
* Connect device in BT-Plugin

Before it worked in that simple fashion, I had several crashes and
reboots.
At some point in time it worked, I don't know why...

You didn't say what device and OS you use, mine is a N770 with OS2006.

firmware, bluetooth headset support, USB host support; I'm sure there are
quite a gifts the community would love to receive (though may not

Just to resolve this:
It works now, but I don't know why. After pairing the first 
time, the N770 crashed and rebooted. After that, it crashed
when I opened applications that require text input.

I clicked around in different dialogs, e.g. the input method
settings. I don't remember exactly what I did, but suddenly
it worked :-)

That really reminds me of some other OS, where you click 
around without knowing what's exactly happening, and
reinstall stuff if it doesn't work...
