The virtual keyboard works also on th n810, it ahs not been removed.

The sensor should be the same. At least the resolution is and afaik both
cameras are using the same kernel driver.

No. It's located in the BT chip of the n800, which is different (and
without FM radio) in the n810.

I've had a N800 since they first came out (01/07).  It's a great little
device and I've been very pleased with it.  Recently, however, it started to
go south.  I thought it was the battery but that does not appear to be the
case so I went and purchased a N810 which I received yesterday.  It took a
few hours but everything is configured and works well.

On to your question about which is better:

1.  The N810 has a slide out keyboard while the N800 does not.  Having a
physical keyboard is nice but so, sometimes, is having a virtual keyboard
especially when you have the device on its stand.

2.  Most of the applications behave the same way using the same OS.  I think
the web cam is of higher quality on the N800 than the N810 from my testing
last night.  

3.  The FM radio is listed as a download so I assume it will work on the
N810 just as it did on the N800.

4.  The buttons, at least so far, seem better placed on the N810 versus the
N800.

USB keyboards don't really require what I would call "software
hacking". You can use the command line, or better yet install USB
Control, and it's a piece of cake.

The caveat with either is that a reboot may be required in order to
get the onscreen stylus keyboard back.

This means you put one in for stuff you want to have there permanently, 
and the other is for putting things in temporarily.  And, I suppose, 
that makes it easy to copy your permanent card to your temporary card 
for backup; then put the backup on a shelf where your n800 can't damage 
it.

n800 is a much better deal.

this a lot), your choices are
  (a) bluetooth
  (b) USB with a female-to-female adapter and some software hacking.

The n800 weight only 206g against 226g for the n810.

The n800 has two full-sized SD slots. This means you can put two 32GB  
cards in for a total of 64GB. The N810 has one miniSD card, and you're  
limited to about 8GB, or 12GB if you use a mini to micro adaptor.
