You can't.  If you want to make sure they receive an important legal
communication, send them a recorded delivery letter.  At least then you
have evidence of its delivery (or lack of).

I gave up reporting abuse to Sendinblue 18 months ago.  It was getting
too much.  A rare thing happened: everything from Sendinblue is refused
for every customer.  There have been no complaints.

Surely everyone drops every packet from OVH long before it reaches their
MTA, so one hopes nobody notices any difference.

should get in the sea, as that might extinguish the fire.

Ignoring for a moment that Gmail is not internet mail and that any
ability to send internet mail to Gmail is a happy accident, did you
carefully wind-down the TTLs on your SPF etc DNS records?
