You can't. If you want to make sure they receive an important legal communication, send them a recorded delivery letter. At least then you have evidence of its delivery (or lack of). Ignoring for a moment that Gmail is not internet mail and that any ability to send internet mail to Gmail is a happy accident, did you carefully wind-down the TTLs on your SPF etc DNS records?
