I have always stored those values in my customsettings.ini so they are 
collected by the Gather TS step and set as soon as the Task Sequence runs. 
Another option would be set those TS variables as an additional steps in your 
Task Sequence if you want to avoid them being stored in a txt file.

OSDJoinAccount=%YOURACCOUNT%
OSDJoinPassword=%YOURPASSWORD%

RE: your problem. I believe you're having that issue because the UDI Wizard 
step which calls the UDI GUI runs before the Tasks Sequence step that sets 
those values as part of a normal Config Manager TS. Make sense? You basically 
need to have those variables populated with values before the UDI Wizard step 
is called.

password from the customsettings.ini file and lock this part it says that I 
need to enter a username (obviously I can't because it is greyed out) but then 
what is the point in me putting this info into the TS if it is not going to do 
anything?

You can put a placeholder in the username field in UDI designer then lock that 
information. You will then need to disable the two AD check at the bottom of 
that page in the UDI designer. Once this is done, do enter the domain join 
account you want to use in the Task Sequence and this should work for you.
