I've got one of these too. Very happy with it. The joystick works fine
in both mouse and joystick mode, though I don't rate it for Mame.

I use http://www.fentek-ind.com/wireless.htm#kbmwtb
 
It's PS/2 so Linux thinks it's just any other PS/2 keyboard. I taught my 
programmable remote all the keystrokes so I didn't have to bother with
LIRC on the front-end. It works perfectly.
 
If you get an RF keyboard instead of IR, you won't be able to teach a
remote the commands, so you'll still need LIRC. IR is fine if you have a
direct line of site.

My keyboard is a BTC 9019URF.  It's RF not IR, but it seems to work fine so far.  It has a joystick that has a mouse mode and joystick mode, and the receiver plugs into a USB port.  I have used it as a joystick under Linux yet, but no problems with the mouse.

I have the Auravision SN502-02 Wireless Keyboard with built-in mouse trackball.  Works fine in Linux.  I don't boot with it plugged in, but as soon as I do plug it in, it works without issue.  The range is pretty good if the receiver isn't too close to the metal case, a few inches away using the included extension cord does the trick.

I use it and I don't have any problems at all. My keyboard plugs into PS/2 so each and every OS will detect it as a PS/2 device. The fact that the actual communication between keyboard/mouse is via IR and not via physical cable is transparent for the OS.

As the matter of fact, I am going to teach my remove some keystrokes  if I find time :)

Note that my keyboard is some cheapo combo which is very hard to get :) It's not one of those fancy ones you can buy nowadays
