How much space are you using?  I believe xfs performance drops as the drive
approaches 100% utilization..

how much ram do you have?  how big is your swap space?
you're probably just swapping after a while, which will bog things down... 
(type free -m at a prompt to see mem/swap usage in megabytes)

you don't need to defrag *nix file systems.  they (especially the
newer ones) are very good at cleaning themselves.

how is it sluggish and what else is your machine doing?

XFS has many tools bundled with xfsprogs, such as xfs_info, xfs_check,
and xfs_repair. Read up on the man pages, or do some googling.

This page (http://oss.sgi.com/archives/linux-xfs/2005-01/msg00091.html)
mentions a xfs_fsr (filesystem reorganizer) program. Maybe that might
do the trick.
