You should be able to set the band & channel in the connection editor
for the shared connection (in the Wireless tab) and have that reflected
in the network that the supplicant creates when NM tells it to.

Hi all!

I have a 3G connection to Internet. I want to share it over WLAN to other 
computers in my family. Can I somehow force the channel of the Ad Hoc WLAN 
network that NetworkManager creates?

I'd like to avoid interference with the WLAN networks of my neighbors. A scan 
finds nearly ten networks here!
