Mistery solved. For some reason when I checked his machine's date and time I 
overlooked the fact that the date was wrong...It can be that sometimes I don't 
know which date I'm living in :)

  Those aren't the full headers.  They're also wrapped, which makes
them hard to decipher.  Use http://pastebin.com or similar to post the
full headers.  You can replace the IP and names if you like, but the
rest is important.  In particular, the "Date:" header is rather the
point of this whole discussion.

Looks OK at that end.

How is the user determining the date is wrong, checking the sent items 
folder or the recipient telling them?
Any weird settings in the user.js file?

Use Tbird constantly at home but not here at work so can't check the 
config options.
Unfortunately, we use Lotus Notes.

  I have an user reporting that his thunderbird is sending emails in the 
future (several days ahead), so it shouldn't be a time zone issue. Windows 
XP displays the right time.

  How can this be possible? Googling is not giving me a clear picture
