I guess you've missed to configure server-character-set=utf8 in the mysql
configuration file.
See those steps in the wiki to re-install with correct encoding.

Opps, you where right I simply ran :
CREATE DATABASE openmeetings
  DEFAULT CHARACTER SET utf8
  DEFAULT COLLATE utf8_general_ci;

and now it works!
