You could do this with Sound Forge.  You would record two individual audio 
files.


In SF pressing the tab key lets you select just the left or right channel. 
So you could open both files.  Have only the left selected in one file and 
only the right selected in the other.  Then you could copy one of the files 
and then paste it into the other.  I think you might need to use the paste 
special sub menu but don't remember right now.


You could do something like this with any sound editor that lets you open 
more than one file as long as it lets you select left or right channels 
individually.


Other methods may be available.  This is what came to my mind as a quick 
solution.

You want to find the loudest point in the recording , and then set your 
recording level making sure that the peak level is in the green or safe 
zone. If you determine your loudest point in the recording first you 
shouldn't have to go back and check your levels every five seconds. . . .
