That is the headset that I currently own and use. The sound is excellent
both incoming and out-going. It also works well with Siri but does not
announce incoming caller ID if that matters.

That's because the Bluetooth device you're using doesn't have the band width 
required, the device you're using is more likely than not a bluetooth 2.0 
device and you'll need at least Bluetooth 3, I've talked about this problem

Sadly when i use bluetooth on my phone with skype things sounds not that good.
It sounds like telephone with a lot of crackles.
But  maybe this is due to the fact that i use the logitech h800 which is not a 
4.0 device.

I think you probably have to Jail Break to do that. The only way I know of 
that could record Facetime or any other call is the analog way of getting a 
cable that gives you separate plugs for headset out and mic in and using 
another recording device like the computer, etc. I think Mac's can likely 
use software like Audio hijack to intercept Facetime's input and output and 
record a call, but I don't think there's a way to do it without involving a 
computer or other device without jail breaking.

Regarding the automatic setting you mentioned, are you referring to the
setting found under accessibility as call audio routing? If so, I wish there
was a setting specific to just FaceTime. Unfortunately, the setting
mentioned above affects all incoming cellular calls as well which isn't
always desirable. Is there such a setting in the FaceTime app? I couldn't
find one.

I've just been chatting to someone on FaceTime using my Yamaha MXP100 Heads
Free music system, as its a Bluetooth 4 device the quality of audio between
us was very good indeed! as was the noise cancellation effect, I was sitting
in my kitchen with my fridge doing its job and the person I was chatting to
had alarms going ooff, phones ringing and God knwos what else happening,  I
did hear the odd click as the noise cancellation system did its thing but
apart from that the call was dead silent apart from the conversation being
conducted, pure magic.
I've not played with Skype for IOS but do intend to in the coming days as
I'm interested to see whether Skype will handle such devices as the Yamaha
MPX100 as well as FaceTime obviously does,.

And finally, both of us in our chat were using hands free devices, me the
aforementioned Yamaha device and the other party used their iPHone in Hands
free mode, we both commented just how clear the whole thing was and how we
wouldn't have known that we were both using hands free systems.

I agree! Skype still have some work to do with IOS.
