Knitting one frame in two colours is easy: you just put the punchcard in the machine and then you drag the carriage left and right until the frame is done, whereas for more colours you may have to spend a lot of time swapping colours at each scanline... I don't know today's machines, but I suspect it's all the same, otherwise they'd have used more colours.
