None is the blunt answer, although some have a 2-sec mirror prefire, which

I've experience of the MZ-5, Z-5 and Z-1p, so I can only answer your
questions for those three.
Quietest :
1) Shutter
MZ-5 by a long margin. It's nice and quiet, unlike the gunshot retort of
the Zs.
2) Film Load and Rewind
Still, the MZ-5 I think, although with the Z-1p you can tell it not to
rewind automatically. This avoids the situation where you cleverly time
your shots to match loud parts in a performance so they won't distract
anyone and then the camera shoots you in the foot with a thirty second
screaming rewind.
3) Mirror
Lost in the Shutter noise on all three.
4) AF
The MZ-5 is quieter, although it has a smaller motor so can be slower. I
find it hunts less sometimes. It does depend on the lens, though. My
Z-1p, with a Tokina 28-70/2.8 whacks the lens against its stops when
focussing: *whirr* THWACK! *whirr* THWACK! *whirr* *beep*
If you're really worried about 'acoustic photography' the MX is a great
solution, although I'm never very convinced by the meter.
