Learned it as a photographer for the college campus newspaper a few years ago 
(versions 3 and 4, I think, just to illustrate the range) and never took a 
formal class although I was being taught in a college newsroom. If that makes 
sense as written. There was a class in existence at the time, and I frequently 
overheard it while working in the area, but wasn't impressed with the teacher, 
and I know the only thing I learned from overhearing that class was that I 
wouldn't ever take a class from that man. Wasn't the same person wo was 
teaching me in one-on-one sessions, and who, herself, was at the time doing an 
independent study or something of that sort with a big-name local Photoshop 
artist.

I also went through most of a "Classroom in a Book" Tutorial, later, which I 
think filled in a few gaps. But there are still many gaps in what I know. (I 
didn't finish the book because I still had a few chapters to go when I 
delivered my second child; suddenly I didn't have the time! Never went back and 
completed the book, for a variety of reasons.)

Probably a class with a competent teacher would be effective. (In fact, in the 
same college, the photo adviser who taught me Photoshop one-on-one is now 
teaching the class; HER students are probably learning something.)

Summary: in my case, OJT and books.

The class is only as good as its teacher and its applicability to your
needs.  Best to do some research (at which, it seems, you're good). 
Example: A friend has taken a class in Marin.  He still can't work with
photos very well, but he learned other features of PS that were important
to him.  So, define what you want to learn, and be sure that is what's
being taught, and that the teacher is really proficient.

As for me, I've been learning through books, tutorials, the Photoshop list,
and with the help of a friend who's a graphic designer.  But I don't need
to know everything about PS to work on photos.

When I first started using PS I wanted to take a class in it.  Now I 
think I could probably teach a class at least
for photographers.  Most classes seem to be aimed at graphic artists.  
There are a number of things in Photoshop a
photographer will probably never use, or at least will be secondary or 
tertiary to the job at hand.  Try to find out
the background of the person teaching the course and the focus of their 
instruction.

I picked it up from books and practice. I do think a course would have
been very useful though. It's okay reading about something but when it
doesn't go to plan and a question needs to be asked, an instructor would
be worth his or her weight in pixels ;-)

Today's PhotoShop classes would almost certainly focus on CS. I doubt 
if anyone would offer a 7 specific class. However, in terms of the 
basics, the differences are very minor.

I took an introductory course, Photoshop Quickstart, from a local 
community
college with a graphics extension. It got me up and running, though I 
just
got my first computer 1 month earlier so I was still learning the 
basics of
how to use that. Since then I've read books and attended seminars and 
would
take another class if there was a good one near by that I could afford.
