If those neighbors had been on their toes, they would have beat the vulture to 
the carcass. They could have been dining on venison saltimbocca tonight.

I actually have a friend who is a venison dresser (ie, a deer
butcher).  He avoids deer if the cause of death can not be clearly
established or if there is any spoilage or scavenger activity.  He
makes great venison sausage, and supplies meat for several charity
food kitchens.  I would trust anything he processes, as he knows what
he is doing, but generally it is very risky to use road kill for food.
