5 minutes is probably too long. Make a test negative by pulling the dark slide out an inch every 30 sec. Have you ever given thought to allowing folks to choose from several popular film types, so that the values on your page would take into account reciprocity? My calculation from your figures is that the metered exposure would be 1752 times the exposure at f16.
