Whatever you decide on, please, please, please make sure it keeps the data
encrypted and a strong password used!
I love to see technology help to make companies and services more efficient,
but the implementation often overlooks security.  A cheap tablet, hacked to
do what you need will likely not be secure.  Even if you get one with
Android AND with the data encrypted, it will likely be painfully slow due to
the encryption unless it has a dedicated chip to encrypt/decrypt the data on
the fly.  I have yet to see such a tablet, not saying they don't exist, but
I haven't seen one.

Remember, whatever conveniences the technology provides, must not be at the
expense of the patent's privacy.

Not that I have heard of.  Although, what I know of, those who have
successfully gotten the panels and menu drop downs added to Gnome3
experience nothing problems with the panels and programs launched from
the menu drop downs.

I have talked to some of the Gnome developers and there is work to
implement similar features into Gnome3, but since they were trying to
make a "clean" break with Gnome3 code wise to improve desktop
performance, several of the previous features willing not work
correctly or generate exceptions/hangs if ported.

I personally have not tried to yet because of the issues I have seen
others experience.

That has been one of the major complaints that I have heard and seen.

[PLUG] question on moving Gnome menus to Ubuntu Oneiric

Is there an easier way to move the panels and menu drop downs from the
old Gnome desktop in Ubuntu 10.04 (lucid) to the new Ubuntu 11.10
(oneiric) than doing it all manually?

While I have Gnome 3 functioning, it is missing lots of the drop downs
and panel items and I would like to transfer the old over, as
painlessly as possible.

Any suggestions?

of the above statement.  It's too late, the 1962 Nobel Peace Prize
was awarded to Linus Pauling.

semi-topical - I use dovecot + procmail to filter email quite
effectively.

I imagine a 7 inch tablet would be fine.  We are dealing with older
eyes, but I assume we can reduce the amount data displayed rather
than show a regular webpage scrunched to teeny-tiny.  But if we
can't reformat the data, we may need 11 inch.  That helps not so
much.
