In my experience, you cannot record different virtual desktops in the same manner that you can a second or third monitor. I second OBS as a great option. I’ve only ever used it with one monitor. Can’t speak to using desktops to mimic monitors as my use case was just to pre-record trainings/tutorials so I didn’t have the need. I use OBS (https://obsproject.com/) for the very use case you need. It works best on a 2 monitor set up where I put the webinar on one screen and set OBS to record that screen. But there are many other ways to use OBS.
