In addition to these, you can take a jeep or hummer tour. jeep would be better.
You can go around here, but I would suggest the Broken Arrow trail in Sedona,
various jeep tours go there -- like pink jeeps for instance.

Nobody seems to have mentioned these:
Mount Lemon (southernmost ski resort in North America) near Tucson; it's open
as a day hiking area in the summer.
Cochise Stronghold and Fort Bowie, in the Dragoon/Chiricahua mountains in SE AZ.
The Painted Desert and Petrified Forest East of Flagstaff
Monument Valley.
Hoover Dam
Roosevelt lake along with the three smaller lakes below it.
The London Bridge (and boardwalk) at Lake Havasu.
Day trips on the lower colorado (start at Lake Havasu or near Kingman, up or
down from there, great in the Winter, mild and relaxing).
The Verde Canyon Railroad, a fine day-trip.
The former route 666 (now 393, originally the Navajo Trail), runs through
some very spectacular scenery in AZ and NM, and makes a nice 2 day trip (plan
well, there aren't a lot of cities on that road).

Closer to home there are literally hundreds of popular (and not-so-popular)
places, including:
Out of Africa
The Phoenix Zoo
The Desert Botanical Gardens
The Heard Museum
Hall of Flame Museum (firefighting museum)
Arizona Railway Museum (http://www.azrymuseum.org/)
Desert Wolf Tours (http://www.desertwolftours.com/)

Many popular attractions have special events at various times of the year, so
check their websites.

I would recommend visiting Tombstone http://www.tombstoneweb.com/ .

I would also recommend a day trip to Bisbee. You will see houses built on the
side of the mountain, an very large open pit mine, and you can take a mine tour.

http://bisbeearizona.com/content/

Old Tucson Studios http://www.oldtucson.com/

I have not been there since the place burned and was rebuilt. Many westerns
have been filed at Old Tucson Studios.

Kitt Peak National Observatory http://www.noao.edu/kpno/

I think you can visit the Yuma Territorial Prison
http://www.azparks.gov/Parks/YUTE/index.html

Chiricahua Mountains http://www.nps.gov/chir/

All of these are from Southwestern Arizona, except Yuma, because that is where
I have spent most of my life.

No I have not spent time in the Yuma Territorial Prison.

pressed to think of things to suggest.

So, what do you good plug friends recommend?

The Phoenix Valley is a huge metropolis with lots of big-city stuff to
check out, so if you haven't, I recommend checking out:

The Phoenix Art Museum
The Phoenix Science Center
Tempe Town Lake
The Phoenix Zoo
Some other zoo everyone is talking about in the far west valley that I
haven't visited yet and am too lazy to Google...
Papago Park
Arizona Capitol
The light rail route - take all of it, for fun, and end up at Super Target
Various golf courses, if you're into that
Pop the Soda Shop

Since you're from the Pacific Northwest, I'm going to assume you have
an above-average taste in coffee, in which case then, I recommend
visiting:

Cartlel Coffee Lab (Downtown Tempe)
Solo Cafe (Tempe near the Guad)
E61 Espresso Bar at Liberty Market (Downtown Gilbert)
Copper Star Coffee (Downtown Phoenix)
Press Coffee (Northeast Phoenix)
Coffee VanGo (Tucson)

Also, there's a slew of stuff that happens everywhere on weekends and
sometimes weekdays. ASU and UAT sometimes bring in geek-famous
celebrities like Steven Hawkings and Ray Kurvweil for public talks
ImprovAZ organizes medium-to-large-scale pranks every now and then,
and there's the First Friday art walk in downtown Phoenix. I
typically find stuff listed on Yelp or by trolling the Twitter public
feed for #PHX. I actually know an ASU student that has lived on free
food for a week by doing this, too. :)

Nice lists so far.

If your're going to Tombstone, be sure to check out Kartchner Caverns
(http://www.azparks.gov/Parks/KACA/index.html) as it's near by on the
way. You'll need to book this one well in advance.

If you're in the area, you might want to check out Biosphere II
(http://www.b2science.org/visitor-tours.html). Haven't done this one myself.

I considered Biosphere a big fat nothing and with nothing

worthless stop]; much better to stay in town, and take the
time to spend a half-day at Taliesin West

If you take the time to read a bit about Frank Lloyd Wright
and his work first and check out a 'coffee table' book or two
first, you'll probably be able to convice the tour leader to
let you 'hang back' and drink in the energy in the building.
Next trip I'll probably do the 'Behind the Scenes' trip.

I talking my way into being able to self guide this way at
the Oak Park home of Wright a couple weeks ago, and found that
well worthwhile.
