Yep, I've been driving a 27" from my 11" Air for a year now and it's great. The 
Air doesn't struggle at all.

(There are always going to be intensive things like a complex fullscreen webgl 
that aren't totally smooth, but you can't have it all.)

The rMBP 13" has the same graphics chip as the new MBA with more RAM and a 
faster chip. I have seen plenty of people drive a 27" screen with their MBA

I understand what he was saying. :)  I can just imagine finding myself in a 
similar situation - not wanting to use the external display and having a big 
internal white whine about how crap it looks. 

I know exactly what you mean about the public transport 13" vs 15" though.  I 
was a dedicated 15" user.  I went through three of them over six years.  Every 
time I used a colleague's 13" I felt so light and free and flexible. ;-)  I've 
been through two of them now and haven't looked back for a second.  I imagine 
I'd feel the same moving to the Air, and more so to an 11".  I was going to for 
my next one too, until the 13" rMBP came on the scene - now I'm torn.

Back on topic: I've read that everything not designed for retina displays look 
pretty bad - how much truth is there in that?

(hence preference for the 13") and the rest of the time plugged in to a
Dell 27" at home or work.

Preferring retina as it's 500g lighter than the non-retina model, and the
price of the non-retina model is near to the retina once you add in the
256GB SSD.

I lock my 15" rMBP to the integrated (Intel 4000) graphics the majority of the 
time I'm using it, and have no trouble with 2d. I would imagine the 13" is just 
fine. Keep in mind, though, that I rarely plug the laptop into an external 
display any more, preferring to use the much nicer internal panel.

Mainly interested to know whether the Intel graphics chipset can shift
pixels well enough at retina resolutions (or 27" 2600x1400), or whether I
should just spend extra and go the 15".

eg: My 2010 15" MBP w/Nvidia chipset can be less than smooth with Chrome on
my 27" display.

Thinking 2D only - I know that 3D is a write off.
