Perhaps the Oregon Outback  if 
you haven't already done it?  A long way to travel, which makes it that 
much more of a commitment (in a very good way).  We did it this past June.  
Definitely recommend for seriously "getting away from it all."

Turns out the frameset was too big for me. No miles on it. I put a BB and
crankset and slid wheels on it only to gauge size and fit.  $750+shipping
for frameset, BB, headset, and albastache handlebar.

I'm also totally open to going somewhere and doing day rides from a hotel 
or hostel.  I looked at an old thread someone had about visiting Riv HQ, 
Mt. Tam, Mt. Diablo, etc... which could be cool.

The White Rim Road near Moab UT is a nice 3 day ride. Need to reserve sites in advance and bring water but it worth it. right up your alley, geared toward extra-long weekends with the terrain 
you're looking for:

Green Mountain Gravel Growler 


There's a route in MD that could also be an option but it's more 
singletrack (50%) than those in VT.
