Perhaps the Oregon Outback  if 
you haven't already done it?  A long way to travel, which makes it that 
much more of a commitment (in a very good way).  We did it this past June.  
Definitely recommend for seriously "getting away from it all."

Have you seen Bikepacking.com's map of routes 
? The two in VT seem to be 
right up your alley, geared toward extra-long weekends with the terrain 
you're looking for:
Roundabout Brattleboro 

Green Mountain Gravel Growler 


There's a route in MD that could also be an option but it's more 
singletrack (50%) than those in VT.
