Here's a diagram of how tank mixed steering works in our hobby.  Two 
channels are used (the left stick in this example, up/down - left/right) 
that are "mixed" by the mixing circuit to control the two motors in a tank.

Stewart,

As Derek points out there are multiple types of speed controllers.  Dual 
and single channel's are typically used (I use a dual in my tank).  A 
single channel is just that, it controls one motor with one input from the 
R/C receiver.  Dual channel systems control two motors with two inputs from 
the R/C receiver and they also include a mixing feature that allows you to 
drive the tank with one stick on the R/C transmitter.  The preferred setup 
today is two single channel controllers with a separate mixing circuit like 
the IMX-1.  Main reason for this is reliability and cost.  Two singles and 
a mixing circuit have come down in cost to below that of most high amperage 
dual channel controllers.  Also, when something busts, it's cheaper and 
easier to replace one single channel controller than an entire integrated 
dual channel one.

There are multiple types of speed controllers...single and dual channel are
most common in the hobby used for propulsion.  A Talon/Victor would be a
single and something like a Vantec RDFR would be a dual.  Most duals have
mixing built in (ie: 1 stick for driving). A single setup would need two
sticks unless you buy a separate mixing circuit like the IMX-1 available at
www.robotmarketplace.com. You would plug both singles into that mixer and
then the mixer would plug into 2 channels on your radio receiver.

Each drive sprocket is driven by a motor,  each motor has its own speed 
control? The forward and reverse set up is done a double pull double throw 
switch some where between the speed control and motor (or similar).  So with 
something like the Victor or Talon would it be a simple plug from the receiver 
(Rx)? If so is there not usually only one stick on the Tx for speed therefor 
one spot on the Rx for a speed control? But it sounds like you need two?

For simple FWD/REV control go with the Victor SP's which are the closest 
replacement to the old Talon SR's.  The new Talon SRX's have extra features 
that aren't required for simple tank driving.  FYI, the new Victors are now 
being made by Cross the Road electronics (same as the Talons).

They arent, but their replacement which we still call the talon is now
available. I would wait a few weeks to order a talon though, theres still 2
weeks in the build season for FIRST and everyone is buying up talons now at
warp speed.

fallen by 5 fold (10  fold on some cases, like a radio)  Battery technology 
is getting better  and cheaper, and even   fractional horsepower motors are 
much easier  to get from known sources instead of surplus.

I also have a small fab  shop and would be happy to help people by making 
simple parts or modifications  to existing parts (like boring out sprockets, 
making keyd shafts,  etc)

something equivalent. Operational vehicles can also be built using relays or 
with servos mechanically pressing manual switches. That technique hardly seems 
worth the effort, though, since you can now get a 60A ESC like this

Most cheap dimmers  "chop the wave form"  to get the dimming effect.  They rely 
on AC,  most remote equipment runs in DC.  Simple answer is no. Complex answer 
is... if you invest maybe 4 years in the equivalent of a undergrad electrical 
engineering degree you can make it from scratch.   (I know people that have 
done this for electric cars,  you learn A TON, but the end product is almost 
4times as costly as simply just purchasing the off the shelf device)

meant for for 120 volt would it even work with the lower voltages you guys use?

I have a number of victor 883 Motor speed controls I would be happy to sell...  
 It doesn't get much easier than 4 wires and a signal line from the radio.  I 
was going to say  the "cheap"  solution almost never is... but that linked PWM 
motor control was over $200...

In all honesty... its much easier and cheaper to build  large scale RC car 
(tank)  today than it was even 5 years ago. The prices for hardware have fallen 
by 5 fold (10 fold on some cases, like a radio)  Battery technology is getting 
better and cheaper, and even   fractional horsepower motors are much easier to 
get from known sources instead of surplus.

I also have a small fab shop and would be happy to help people by making simple 
parts or modifications to existing parts (like boring out sprockets, making 
keyd shafts, etc)

Yes, that could be used to control the speed of one or two motors by 
connecting a servo to the rotary dial using a suitable linkage or gear. 
 You could then provide forward/reverse direction control using a 
simple pair of relays per motor.
