I just  made these Monday, and they were delightful! I used grated peel in
the base,  though, for more zing, and added a little more lemon extract 
to the
filling  in addition to the lemon juice.
This one is a KEEPER!

Lemon Bars  Crust:
2 C all purpose flour, sifted
1 C butter or margarine,  softened
1/2 C Confectioner’1/2 C Confectio

*Sift together flour  and confectioner’*Sift together flour  and confectio
clings together.  Press into 9×13 inch dish. Bake at 350 for twenty five
minutes or until  lightly browned. 

Filling:
4  eggs, beaten
1/2 tsp. baking powder
2 C granulated sugar
4 Tbsp.  Confectioner’4 Tbsp.
1/3 C lemon juice
1/2 C flour

Combine and  beat eggs, granulated sugar, and lemon juice. Sift flour and
baking powder;  stir into egg mixture. Pour over baked crust. Bake at 350 
for fifteen minutes or  until slightly browned and set. Remove from oven.
Cool and sprinkle with  confectioner’Cool and sprinkle with

Lemon Bars
Source - The Lady and Sons, Too!

CRUST
2 cups  all-purpose flour
1 cup confectioners' sugar
Pinch of salt
1 cup (2  sticks) butter, at room temperature

FILLING
4 eggs
2 cups  granulated sugar
6 tablespoons all-purpose flour
6 tablespoons fresh lemon  juice

Preheat the oven to 350 degrees. Lightly grease a 13 x 9 x  2-inch
pan. Make the crust: Combine the flour, confectioners' sugar,  and
salt in a large bowl. Cut in the butter to make a crumbly mixture.  
Press the mixture into the prepared pan. You may need to dip your
fingers  into a little flour or confectioners' sugar to keep the dough
from sticking  to your fingers. Bake for 20 minutes. 

Meanwhile, make the filling: Mix  the eggs, granulated sugar, flour,
and lemon juice. Pour this over the baked  crust and bake for 25
minutes longer. Sprinkle with confectioners' sugar, if  desired, when
the bars are cool.

Yields - 24  bars

Lemon Bars Crust

2 cups flour

1 stick butter

1/2 cup powered sugar

 

I use a food processor to combine the flour, sugar and butter.

Pat into a 9 x 9 pan. Bake 25 minutes at 350*

 

Filling

beat together the following

2 cup sugar

4 T. flour

1/4 tsp. salt

juice of 2 lemons

1 tsp. baking powder

4 beaten eggs

 

Pour filling on cooked crust, put back into oven for 30 minutes

or golden brown. Cool, sprinkle with powered sugar. Cut into

bars.

 

Note:

Keep the butter cold when you add it, I find this makes the

crust so smooth and people say how did you make this and of

course I give them the recipe but not the food processor part

and they say I made your recipe but its just not as light

Lemon Bars

1 pkg. Duncan Heinz Lemon Supreme Cake Mix
1/3 c. shortening
1/2 c. sugar
3 eggs
1/2 tsp baking powder
1/4 tsp salt
2 tsp grated lemon peel
1/4 c. lemon juice

Preheat oven to dg350.

Combine 1 egg, shortening and dry cake mix until crumbly. Reserve 1
cup. Pat remaining mixture lightly in ungreased 13 by 9 by 2 inch pan.
Bake at dg350 for 15 minutes or until light brown.

Beat remaining 2 eggs, sugar, baking powder, salt, lemon peel and
lemon juice with beater until light and foamy. Pour over hot crust.
Sprinkle with reserved crumb mixture. Bake 15 minutes until light
brown. Sprinkle with Confectioners' sugar if desired. Cool. Cut into
bars 2 by 1-1/2 inches.

Lemon Bars
Source: Better Homes and Gardens 
Makes 16 bars
 
Prep: 20 minutes 
Bake: 35 minutes 
Ingredients
Nonstick cooking spray 
3/4 cup all-purpose flour 
3 tablespoons granulated sugar 
1/4 cup margarine 
1 egg 
1 egg white 
2/3 cup granulated sugar 
2 tablespoons all-purpose flour 
1/4 teaspoon finely shredded lemon peel 
2 tablespoons lemon juice 
1 tablespoon water 
1/4 teaspoon baking powder 
1 tablespoon powdered sugar 
 
Directions
1. Spray an 8x8x2-inch baking pan with nonstick spray; set pan aside. 
2. In a small mixing bowl combine 3/4 cup flour and 3 tablespoons
granulated sugar. Cut in margarine until crumbly. Pat mixture onto the
bottom of the prepared pan. Bake in a 350 degree F oven for 15 minutes. 
3. Meanwhile, in the same bowl combine egg and egg white. Beat with an
electric mixer on medium speed until frothy. Add 2/3 cup granulated
sugar, 2 tablespoons flour, lemon peel, lemon juice, water, and baking
powder. Beat on medium speed for 3 minutes or until slightly thickened.
Pour mixture over baked layer in pan. Bake for 20 to 25 minutes more or
until edges are light brown and center is set. Cool in pan on a wire
rack. 
4. Sift powdered sugar over top. Cut into bars. Store in refrigerator.
Makes 16 bars.

For the crust:
1/2 pound unsalted butter, at room temperature
1/2 cup granulated sugar
2 cups flour
1/8 teaspoon kosher salt

For the filling:
6 extra-large eggs at room temperature
3 cups granulated sugar
2 tablespoons grated lemon zest (4 to 6 lemons)
1 cup freshly squeezed lemon juice
1 cup flour
Confectioners' sugar, for dusting

Preheat the oven to 350 degrees F.

For the crust, cream the butter and sugar until light in the bowl of an 
electric mixer fitted with the paddle attachment. Combine the flour and salt 
and, with the mixer on low, add to the butter until just mixed. Dump the dough 
onto a well-floured board and gather into a ball. Flatten the dough with 
floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 
1/2-inch edge on all sides. Chill.

Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a 
wire rack. Leave the oven on.

For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and 
flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is 
set. Let cool to room temperature.

Cut into triangles and dust with confectioners' sugar.

LEMON BARS DELUXE

2 1/4 cups flour
1/2 cup confectioners' sugar + additional for sprinkling
2 sticks unsalted butter
4 beaten eggs
2 cups granulated sugar
1/3 cup fresh lemon juice
1/2 tsp baking powder

Preheat oven to 350\'b0. Whisk together 2 cups of the flour  the 
confectioners' sugar. Cut in the butter until the mixture clings together. 
Press the dough into a 13x9x2 baking dish. Bake for 20-25 minutes or until 
lightly browned.

Meanwhile, beat together the eggs, granulated sugar  lemon juice. Mix the 
remaining 1/4 cup flour with the baking powder; stir into the egg mixture  
pour over the hot baked crust. Bake for 25 minutes longer. Remove from oven 
 sprinkle with more confectioners' sugar. Cool. Cut into 1 1/2 bars.
