@Anonymous FTP-Server is only the Configuration of your installed FTP-Server, you should only have change your FTP config file or disable the hole FTP-Server. For the other things, i would search all installed packages for some keywords, and deinstall theses packages.

Any quick hits/hints/tips on how to clean this server up?  IIRC, these keywords are defined on the CD somewhere.  For example, I want to uninstall everything from "@Anonymous FTP Server".
