The MAC of a VNIC can only be set during creation.
So, you first need to remove it and then re-add it with the "mac" 
property set to you desired value.

If you don't set the "mac" property it will be auto-generated for you.

I don't think you can, the MAC address is the key used to apply updates 
to the NIC.
