It's the best way to install php, apache2, mysql5, etc and have them  
start up automatically. It also is not a pre-compiled app, which is  
good.

You could also use Fink. (Hell, you can even install Gentoo's Portage
on Mac OS X and reap the benefits of being able to update your
packages).

I would recommend installing the MySQL binary installer from the  
MySQL website:
http://dev.mysql.com/downloads/mysql/5.0.html

and then downloading the PHP binary installer from http:// 
www.entropy.ch/software/macosx/php/

That works well if you don't need additional packages or a lot of  
custom configuration.

Actually, there is a XAMPP version for OSX. Works well for me, although 
I had some trouble with wrong file permissions out of the box.

You can use MAMP (http://www.mamp.info/en/home.php), or compile and 
setup a LAMP platform by yourself (OS X Is another BSD).
