There are other rendering solutions such as Maperitive which give you
control over what is rendered.  There are tags such as florist which are in
features wiki.openstreetmap.org/wiki/Map_Features but not rendered by the
default schemes.  Even with the web rendering there are things such as
cyclemap which has a different set of rendering rules.

I'd just carry on tagging.

You might be using your tag perfectly and still it might never get
rendered in a specific map rendering layer.  No single map layer can
satisfy every potential viewer.  You can use Mapnik yourself, and
render a map to suit your requirements.

Still, without guarantees, the OSM Mapnik style maintainers are
volunteers.  If your request has any hope of being accepted by the
maintainers, you can make things much easier on them, by doing the
work yourself.  Create an icon, create and test a working ruleset,
create a diff so that they can apply it to their style, and send all
of that as a trac item, feature request against component mapnik
in the OpenStreetMap trac system.  That could make the difference
between them thinking, um, possible, but I don't have time for that
right now and thinking, well with all of the answers provided, I can
do that quickly.

Many (most?) people who create mkgmap maps will tinker with the style 
files to some extent.


If the question is how do I get feature XYZ added to the default style 
file then a chat with the people on the mkgmap list might make sense:

People submit occasional default style patches, and they get 
incorporated (usually after a bit of discussion, but without any of the 
aggravation that sometimes inhabits the OSM lists).
