Welcome, Mat! I can’t solve your problem completely since I operate in a totally different environment. But it appears you’re trying to use MusiXTeX within LaTeX. Unless you have some very good reason (like maybe writing a book with embedded musical examples), it’s much cleaner and easier to use MusiXTeX with plain TeX (or eTeX). LaTeX provides unnecessary extra baggage.
