 Any idea how to get 'new entry' to add a time as well as a date, so that 
 i can
 click on 'new journal' and get a brand new, empty entry every time?

If you haven't discovered them already, you might really like Dave 
Gifford's Braintags:

... both of which are designed for on-the-fly note-taking using timestamps 
as tiddler titles.  (You can loop back and re-title or organize notes 
later.)
