Yes running LMS on RPi.  So I’ll use web control via laptop?  

I can also run LMS on laptop but I couldn’t get Touch to connect via
WiFi.  

Wish my laptop had digital out so I could at least play through my
separate DAC even by iTunes.

Install and run Advanced IP Scanner:
https://www.advanced-ip-scanner.com/

It will find your piCorePlayer server IP address.  Enter this manually
in your Touch.
