You can add lines like these to the end of the index.theme:

ApplicationFont=sans 18
DocumentsFont=sans 18
DesktopFont=sans 18
WindowTitleFont=sans 18
MonospaceFont=monospace 18

I do *not* suggest doing this because although one font size might look good 
on your desktop it definitely will not look good on all desktops. This is a bug 
in the selection of the font by the installer (or whatever) and I suggest you 
report it if it isn't already. On my system the fonts were larger than before, 
so setting large fonts in the theme wouldn't help me at all ;)

Can be adjusted via gconf-editor or going System -Preferences - Appearance
and selecting the Fonts tab.

 I don't know. Maybe we could begin with searching for good candidates
 for the icon theme and then modify them -- color, shape of such or
 such icon -- to fit our desires. So if a you have some time to kill on
 gnome looks, don't hesitate

It's a good idea and a good way. For example, I like the Elementary
Incons. They have their source. In the past I had tried to make changes
and I don't think that it's hard.
It's just an idea.

Sorry, I didn't  mean the shadow behind  the title bar, but behind the
title of the window bar -- no shadow behind the font thus. That's not the
same thing! Sorry for the confusion.

Also, do you think it would be possible to add a really light gradient in
the light gray part of the window? Here is what I mean:

That makes it really better, imo.

Yes, sure. Yesterday I was too drowsy. :-)

Sure, but just for the commentary. Indeed, yesterday I don't worked over it
but I have done a first draft.
Today I will work in this way.

 We can probably begin to think about controls. We'll have to try

 We can also improve the taskbar, particularly the monochromic icons --
