Você pode testar isso antes de tornar definitiva a mudança, fazendo assim: tu seleciona o kernel que vai dar boot, daí aperta E pra editar. Desce um, se não me engano, pra selecionar a linha que começa com kernel= e aperta E de novo, aí acrescenta a opção 'vga=773' no fim da linha (sem as aspas). Depois é só dar um enter e depois um B de boot. Se der certo, é só editar o arquivo /boot/grub/menu.lst e colocar a mudança lá, tornando-a definitiva, como sugeriu o Arlei.
