Hi,
it seems you have a dependency problem which should not occur.

Could you try:
$ dpkg --reconfigure mysql-server-5.7
$ dpkg --reconfigure mysql-server

And report the output here, it might not be more what we already have
but I want to make sure when I see the tail of the log to catch all.

In "general" on this kind of errors an approach like [1] can also be taken.
Of course for mysql-server and mysql-server-5.7 in your case.
