Did you allready try the Intrepid Beta? Big chance it's fixed there.

Also, in Ubuntu 8.04.1, try adding the following to the Screen section
of /etc/X11/xorg.conf:

SubSection Display
Virtual 2560 2048
EndSubSection

Your screen section will end up like this:
Section Screen
Identifier  Default Screen
Monitor Configured Monitor
Device  Configured Video Device
SubSection Display
Virtual 2560 1824
EndSubSection
EndSection

If that works, than it's because in 8.04 the XrandR's virtual screen
size isn't changed dynamically. AFAIK this is fixed in Intrepid.
(Haven't tested this though.)
