Fn+ hotkeys does not work in Jaunty Beta, it's OK. Brightness regulation does work using Brightess Panel Applet ONLY when using default video driver (I don't know what one). When choosing to enable NVidia proprietary driver, Brightness applet does not work anymore. Plz fix it. See: #291878 and #295251 . Those Bugs describe similar Problems. As the Kernel Log already suggests, one can setup the keys with setkeycodes, for instance in /usr/share/hotkey-setup/samsung.hk . But even though the Keys are then recognized, pressing a key such as Backlight + or Backlight - the kernel, X11 or whatever thinks one keeps pressing/releasing that button for ever. Possibly an adapted kernel patch like the one supplied there will work for the R560 as well.
