This looks like it wasn't a bug within sensors-applet, but something wrong with your system. This bug report is being closed due to your last comment regarding this being fixed with a reinstall. As I found later, not only icons in sensors-applet disappeared, but also icons in several other applications, such as rhythmbox, synaptic, backlight brightness control.
