Okay, I figured out grub, I think. It looks like it was installing to the wrong hard-drive. In order to get any grub changes to take effect, I have to issue: "sudo grub-install /dev/sda" and then also "sudo update-grub". Additionally, I added "splash quiet" back in and there is no problem with the display now. Maybe it was just because I was booting into the wrong kernel version from grub. Problem resolved, I guess, but it would've been nice not to have had to spend the whole morning getting this upgrade up and running again. If I remove "splash" from the linux line in grub, I don't get the screen corruption. This would be a fine solution if I could get it to stick. It seems I have to do this manually every time I reboot.
