I was repeating some tests this AM and in retrospect this should be fine. If the installation is begun from the Live Desktop any screenshots can just as easily be saved to the Desktop or Home (wherever preferred) and upon completing the installation choosing to keep testing, rather than immediately restarting, I can then save those screenshots to the flash drive w/o a problem.
