I believe there is a typo in your description and title and you mean
xserver-xorg (as xserver-org doesn't exist in ubuntu).
Regarding the lack of configuration options I believe this was done on purpose
as the newer xserver's auto-detect the hardware when you start the xserver. If
you need to change the settings you may find you now have to edit the file
/etc/X11/xorg.conf with the settings you need. If you have made some changes to
your computer that has caused xorg to stop working and there is a xorg.conf
file present first try renaming the file so the xserver starts with the default
automatically detected settings.
