Mplayer plays music just fine (and I made sure to use -ao pulse).  So
looks like a gstreamer issue?

Just tested and without pulseaudio running, totem, rhythmbox, and
banshee all  seem to work fine.

Once I have pulseaudio running again, they each do the freezing thing.

Yes, it does happen in Rhythmbox.  Here's the pulse log for a run in
Rhythmbox.  I opened it, played a file, and it immediately entered
frozen mode (sometimes a few seconds of music play first, but not this
time).
