Its a 1.1 GHz Intel Celeron 847 Sandy Bridge processor. Anyone got any
thoughts on how well it would run Ubuntu.

Being EFI based is not a problem.

They usually have a "developer switch" under the battery which lets you
monkey around with the software install.
